Garlic Scape Pickles
This recipe is basically the “Dilly Beans” recipe from the Ball Blue Book. We have oregano this week, which goes great with garlic. You could still use dill if you’d prefer. As long as you don’t lower the acidity, you can get creative with it, like mixing green onions in, or using your chard stalks.

Love this recipe especially since we grow most of these vegetables. I add a cup of chopped celery and an extra cup of corn to each batch. I make three batches anI then waterbath- can the jars so we have a supply all winter.
